Lunch: Pizza Quesadillas

24 Slices Turkey Pepperoni

8 Slices Fresh Mozzarella

4 Tbsp Store Bought Marinara

Directions

1. Spread 1 Tbsp marinara on 1 side of tortilla

2. Place 4 slices of fresh mozzarella on top of marinara

3. Top with 6 slices of turkey pepperoni and fold tortillas in half

4. Lightly spray cooking spray in medium sized skillet

5. Place quesadillas into skillet and cook on medium high heat for 1-2 minutes on each side or until golden brown and cheese is melted


Dinner: Nicoise Salad

2 Cups Spinach

6 oz Whole Green Beans

½ Cup Cherry or Grape Tomatoes

2 Tuna Steaks

½ Cup Kalamata Olives

2 Soft Boiled Eggs, halved

½ Cup Cucumber, sliced

½ Cup Jarred Artichoke

1 Tbsp Extra Virgin Olive Oil

Salt and Pepper to Taste

12 oz Whole Green Beans
1 Cup Cherry or Grape Tomatoes
4 Tuna Steaks
1 Cup Kalamata Olives
4 Soft Boiled Eggs, halved
1 Cup Cucumber, sliced
1 Cup Jarred Artichoke
2 Tbsp Extra Virgin Olive Oil
Salt and Pepper to Taste

6 Cups Spinach

18 oz Whole Green Beans

1 1/2 Cup Cherry or Grape Tomatoes

6 Tuna Steaks

1 1/2 Cup Kalamata Olives

6 Soft Boiled Eggs, halved

1 1/2 Cup Cucumber, sliced

1 1/2 Cup Jarred Artichokes

3 Tbsp Extra Virgin Olive Oil

Salt and Pepper to Taste

Directions

1. Bring a pot of water to a boil. In one, add eggs and boil for 6 minutes. Remove from the pot of water and put into a large bowl of ice water to cool. In the same pot of boiling water, add green beans and boil for 1 minute. Remove from water and add to ice water, adding more ice if necessary

2. While eggs and beans are cooling, heat olive oil in a skillet on medium-medium high heat and add tuna steaks to the skillet, reducing heat if necessary and salt and pepper to taste. Cook for 2 minutes on each side

3. Remove tuna from heat and eggs and beans from water. Pat eggs and beans dry

4. Remove shells from eggs and half

5. Assemble salad and drizzle with dressing

1. Whisk together ingredients and drizzle over salad
