Lunch: Greek Wrap

1/2 Cup Cucumber

1/2 Cup Grape Tomatoes, halved

1/2 Cup Kalamata Olives, halved

2 Tbsp Red Onion, finely diced

4 Tbsp Feta Cheese, crumbled

1/2 Cup Spinach, chopped

2 Tbsp Store Bought Hummus

2 Whole Grain Wraps

 

 

1 Cup Cucumber

Directions

1. In a bowl, toss together all other ingredients except hummus and wraps. Pour dressing over salad and gently toss together.

2. Evenly spread hummus on each wrap and evenly add salad to wrap and roll or fold up.

Dinner: Penne Italian Bake

1/8 Lb 80/20 Ground Pork, cooked and crumbled

1/8 Lb Grass Fed Organic Ground Beef, cooked and crumbled

1/8 Lb Ground Turkey, cooked and crumbled

1/3 Lb Penne Pasta (gluten free is delicious)

Directions

1. Preheat oven to 350 degrees.

2. In a skillet on medium to medium high heat, add all meat, onion, peppers, and Italian seasoning. Reduce heat and cook, crumbling the meat as it cooks, until meat is no longer pink and cooked through.

3. While meat is cooking, cook noodles according to package directions.

4. Once meat is cooked through, stir in marinara and allow to simmer on low heat for approx. 5 minutes.

5. Drain water from noodles and gently stir noodles into meat mixture. Remove from heat.

6. Spray baking dish with cooking spray and pour meat and pasta mixture into baking dish and top w/mozzarella cheese.

7. Bake in oven for 15-20 minutes or until heated through and cheese has melted.
