Lunch: Greek Chicken Bowl w/Cucumber Dill Sauce

8 oz Chicken Breast Tenderloins, roasted (Store bought rotisserie can be used)

½ Cup Quinoa, uncooked

1 Cup Water

1 Cup Spinach

½ Cup Grape Tomatoes

½ Cup Cucumber, sliced

8 Kalamata Olives

¼ Cup Feta Cheese, crumbled

Cooking Spray

16 oz Chicken Breast Tenderloins, roasted (Store bought rotisserie can be used)

1 Cup Quinoa, uncooked

2 Cups Water

2 Cups Spinach

1 Cup Grape Tomatoes

1 Cup Cucumber, sliced

16 Kalamata Olives

1/2 Cup Feta Cheese, crumbled

Cooking Spray

24 oz Chicken Breast Tenderloins, roasted (Store bought rotisserie can be used)

1 1/2 Cups Quinoa, uncooked

3 Cups Water

3 Cups Spinach

1 1/2 Cups Grape Tomatoes

1 1/2 Cups Cucumber, sliced

24 Kalamata Olives

3/4 Cup Feta Cheese, crumbled

Directions

1. Preheat oven to 400 degrees.

2. Place chicken in a baking dish lightly sprayed w/cooking spray and roast in oven approx. 20 minutes or until cooked through.

3. While chicken is roasting, heat water to a boil, add quinoa, and cook according to package directions.

4. Evenly layer all ingredients and drizzle w/ cucumber dill sauce.

1/3 Cup Whole Milk Plain Greek Yogurt

1/4 Clove Garlic, minced

1/2 tsp Dried Dill

3/4 tsp Salt

1/3 tsp Ground Black Pepper

1/3 tsp Lemon Juice

½ Cucumber, seeded and diced

¾ Cup Whole Milk Plain Greek Yogurt

½ Clove Garlic, minced

1 tsp dried Dill

1 ½ tsp Salt

¾ tsp Ground Black Pepper

¾ tsp Lemon Juice

3/4 Cucumber, seeded and diced

1 1/8 Cups Whole Milk Plain Greek Yogurt

Directions

1. Put all ingredients into a blender and blend until smooth.


Dinner: Beef and Broccoli Stir Fry w/Rice

1/2 Tbsp Honey

1 Tbsp Soy Sauce

1/2 tsp Cornstarch

1/8 Cup Beef Broth



16 oz Beef Tips

4 Cups Fresh Broccoli Florets, chopped

1/2 Cup Onions, sliced

2 Tbsp Sesame Oil

1 Tbsp Honey

2 Tbsp Soy Sauce

1/4 Cup Beef Broth

24 oz Beef Tips

6 Cups Fresh Broccoli Florets, chopped

3/4 Cup Onions, sliced

3 Tbsp Sesame Oil

1 1/2 Tbsp Honey

3 Tbsp Soy Sauce

1 1/2 tsp Cornstarch

1/3 Cup Beef Broth

Directions

1. In a bowl, whisk together honey, soy sauce, cornstarch, and beef broth.

2. In a skillet, heat sesame oil on medium to medium high heat.

3. Add beef tips to skillet and stir fry for approx. 5 minutes, reducing heat if necessary. Add broccoli and onion to skillet and stir fry for an additional 5 minutes or until meat is cooked through.

Directions

1. In a saucepan, bring water to a boil and stir in rice.

2. Cover saucepan, reduce heat to a simmer and continue simmering for 15 minutes or until all water is absorbed and rice is fluffy.

3. Remove from heat and stir in olive oil. Add salt and pepper to taste.
