Lunch:
Creamy Chicken Salad

8 oz Chicken Tenderloins, cooked and diced

1/4 Cup Olive Oil Mayonnaise

1/4 Cup Celery, diced

1 Green Onion, diced

1/2 tsp Dijon Mustard

1/2 tsp Seasoned Salt

1/4 tsp Dried Dill



16 oz Chicken Tenderloins, cooked and diced

1/2 Cup Olive Oil Mayonnaise

1/2 Cup Celery, diced

2 Green Onion, diced

1 tsp Dijon Mustard

1 tsp Seasoned Salt

1/2 tsp Dried Dill

24 oz Chicken Tenderloins, cooked and diced

3/4 Cup Olive Oil Mayonnaise

3/4 Cup Celery, diced

3 Green Onion, diced

1 1/2 tsp Dijon Mustard

1 1/2 tsp Seasoned Salt

3/4 tsp Dried Dill

 

Directions

 

  1. In a pot, cover chicken with water and bring to a boil. Continue simmering for 20 minutes or until cooked through.
  2. Once chicken has cooked, remove from water, allow to cool, and dice.
  3. Mix all ingredients together and serve chilled as a sandwich or on a bed of lettuce.

Chicken Brunswick Stew

1/3 (15 oz) Can Diced Tomatoes, undrained

1/3 Cup Store Bought BBQ Sauce

10 2/3 oz Chicken Broth

1/3 (10 oz) Bag Frozen Bag

1/3 (16 oz) Bag Frozen Limas

Ground Black Pepper to Taste

1 1/3 Lb Chicken Tenderloins, cooked and diced (or 1 Rotisserie Chicken)

Ground Black Pepper to Taste

Directions

1. In a pot, cover chicken with water and bring to a boil. Continue simmering for 20 minutes or until cooked through.

2. Once chicken has cooked, remove from water and dice.

3. Add all ingredients to the pot and gently stir together. Bring to a simmer and simmer for at least 30 minutes.
