LUNCH: BLT Chicken Salad

1  Cup Chicken, cooked and diced

1/4 Grape or Cherry Tomatoes, quartered

1/4 Cup Spinach, chopped

2 Slices Bacon, cooked and crumbled

1/4 Cup Plain Whole Milk Greek Yogurt

1/2 tsp Dried Parsley

1/4 tsp Garlic Powder

1/4 tsp Onion Powder

Salt and Pepper to Taste

2 Cups Chicken, cooked and diced

½ Grape or Cherry Tomatoes, quartered

½ tsp Garlic Powder

3 Cups Chicken, cooked and diced

3/4 Grape or Cherry Tomatoes, quartered

6 Slices Bacon, cooked and crumbled

Directions

1. Bring medium sized pot of water to a boil on medium-high

2. Add chicken, reduce heat to low-medium, and continue to boil for approx 25-30 min or until cooked through

3. While chicken is cooking, cook bacon in a skillet on medium-medium high heat until crisp, flipping occasionally. Remove from heat, drain on a paper towel, and crumble

4. Once chicken has cooked through, allow to cool and finely dice

5. Gently mix all ingredients together

Serve chilled

**This is delicious on a bed of lettuce, in a pita, or in a wrap**


Dinner:Chicken and Veggie Tacos

1/2 Bell Pepper, cut into thin strips

1/4 Purple Onion, cut into thin strips

2 1/2 oz Sliced Mushrooms

1 Tbsp Extra Virgin Olive Oil

1/2 Tbsp Taco Seasoning (Store bought can be used, but homemade recipe below)

4 Corn Tortillas

½ Lb Chicken Tenderloins, cut into thin strips

1 Bell Pepper, cut into thin strips

½ Purple Onion, cut into thin strips

5 oz Sliced Mushrooms

2 Tbsp Extra Virgin Olive Oil

1 Tbsp Taco Seasoning (Store bought can be used, but homemade recipe below)

8 Corn Tortillas



3/4 Lb Chicken Tenderloins, cut into thin strips

1 1/2 Bell Pepper, cut into thin strips

7 1/2 oz Sliced Mushrooms

3 Tbsp Extra Virgin Olive Oil

1 1/2 Tbsp Taco Seasoning (Store bought can be used, but homemade recipe below)

12 Corn Tortillas

 

Directions

1. Toss chicken and veggies in taco seasoning

2. In a large skillet, heat olive oil on medium-medium high heat

3. Add chicken and veggies to to skillet and cook for 10-12 minutes, stirring frequently

4. Warm tortillas in oven or microwave

5. Add chicken and veggies to tortillas and top with favorite toppings

 

Homemade Taco Seasoning

1. Put all ingredients into a small container with a lid and shake until mixed

 

Homemade Guacamole

Juice of 1 Lime

1 1/2 Cloves Garlic, minced

1/8 Cup Cilantro, chopped

1/8 Cup Red Onion, finely diced

1/8 Cup Grape Tomatoes, diced

3 Avocados, peeled, seeded and diced

Juice of 1 Lime

¼ Cup Cilantro, chopped

⅛ Cup Grape Tomatoes, diced

Salt and Pepper to Taste

1. In a large bowl, mash avocado with a fork

2. Add lime juice and all other ingredients. Mix gently

3. Cover and refrigerate
