Lunch: Red Pepper, Mushroom, Spinach, and Goat Cheese Grill

4 Slices Whole Wheat Bread

2 oz Goat Cheese, sliced or crumbled

4 Baby Bella Mushrooms, sliced

½ Red Bell Pepper, sliced

½ Cup Fresh Spinach

2 Tbsp Extra Virgin Olive Oil

8 Slices Whole Wheat Bread

4 oz Goat Cheese, sliced or crumbled

8 Baby Bella Mushrooms

1 Red Bell Pepper

1 Cup Fresh Spinach

12 Slices Whole Wheat Bread

6 oz Goat Cheese, sliced or crumbled

12 Baby Bella Mushrooms, sliced

1 1/2 Red Bell Peppers, sliced

1 1/2 Cups Fresh Spinach

6 Tbsp Extra Virgin Olive Oil

 

Directions

1. Evenly layer cheese and veggies onto two slices of bread and top each with other slices of bread

2. Heat olive oil in a large skillet on medium to medium high heat and add sandwiches to skillet, reducing heat if necessary to avoid splattering

3. Cook until toasted on each side and cheese has begun to melt, about 3 minutes per side

Chicken Tostadas w/Cilantro Lime Rice

1/2 Lb Chicken Tenderloins, sliced into thin strips

2 Store Bought Tostadas

1/2 Tbsp Taco Seasoning (Store bought can be used, but homemade recipe below)

1 Tbsp Extra Virgin Olive Oil

Juice from 1 Lime

1 Med. Tomato, diced

1 1/2 Avocados, diced

1 Tbsp Red Onion, finely diced

1/8 Cup Cilantro, chopped

1/2 (15 Oz) Can Black Beans, rinsed and drained

1/4 Cup Feta Cheese, crumbled

1 Lb Chicken Tenderloins, sliced into thin strips

1 Tbsp Taco Seasoning (Store bought can be used, but homemade recipe below)

2 Tbsp Extra Virgin Olive Oil

Directions

1. Preheat oven to 400 Degrees

2. Slice chicken into strips

3. Place chicken onto sheet pan in a single layer

4. In a small bowl, combine olive oil and taco seasoning. Pour it over chicken and toss to coat

5. Bake in oven for 10-15 minutes or until chicken is cooked through

6. While chicken is cooking, gently combine vegetables, feta, and lime juice in a bowl

7. In the oven, heat the tostadas for about 3 minutes

8. Place chicken on top of tostadas and top with vegetable mixture

Homemade Taco Seasoning

1/2 Cup Basmati Rice

1 Cup Chicken Broth

1 Tbsp plus 1 tsp Extra Virgin Olive Oil

1 1/2 Tbsp Lime Juice

1/2 Cup Cilantro, finely chopped

Salt and Pepper to Taste

1 Cup Basmati Rice

2 Cups Chicken Broth or Water

2 Tbsp plus 2 tsp Extra Virgin Olive Oil

3 Tbsp Lime Juice

1 Cup Cilantro, finely chopped



1 1/2 Cups Basmati Rice
