Avocado Tuna Salad

1 (5 oz) Can Solid White Albacore Tuna in Water, drained and flaked

½ Avocado, seeded, peeled and chopped

¼ Cup Red Onion, diced

½ Cup Grape Tomatoes, halved

Juice from ¼ Lime

Salt and Ground Black Pepper to Taste

Directions

1. Drain tuna and put into a bowl

2. Add all other ingredients and gently mix together

3. Serve on whole grain bread as a sandwich or on a bed of greens

Cilantro Lime Chicken

2/3 Lb Boneless Skinless Chicken Breasts

1/3 Bunch Cilantro

Juice from 1 1/3 Limes

1 Clove Garlic, minced

1 Tbsp Extra Virgin Olive Oil

2/3 Tbsp Honey

1/3 Tbsp Cumin

Salt and Ground Black Pepper to Taste

1 1/3 Lbs Boneless Skinless Chicken Breasts

2/3 Bunch Cilantro

Juice from 2 2/3 Limes

2 Cloves Garlic, minced

2 Tbsp Extra Virgin Olive Oil

1 1/3 Tbsp Honey

2/3 Tbsp Cumin

Salt and Ground Black Pepper to Taste

2 Lbs Boneless Skinless Chicken Breasts

1 Bunch Cilantro

Juice from 4 Limes

3 Cloves Garlic, minced

3 Tbsp Extra Virgin Olive Oil

2 Tbsp Honey

1 Tbsp Cumin

Salt and Ground Black Pepper to Taste

Directions

1. In a blender, add olive oil and all other ingredients except chicken. Blend until completely processed

2. Place chicken in a bowl or baking dish and pierce it with a fork or knife. Pour marinade over it, coating completely. Cover and marinate for at least 30 minutes

3. Preheat oven to 400 degrees and bake in marinade for approx 25-35 minutes or until cooked through

4. Serve over Mexican rice and beans (recipe below)

1/2 Cup Store Bought Salsa (Homemade Recipe Below)

1/3 (15 oz) Can Black Beans, rinsed and drained

1/3 tsp Cumin

1/3 tsp Paprika

Juice from ⅛ Lime

Salt to Taste

1 Tbsp Extra Virgin Olive Oil

1/3 Sweet Onion, diced

1 1/3 Cups Basmati Rice

3 Cups Chicken Broth

1 Cup Store Bought Salsa (Homemade Recipe Below)

2/3 (15 oz) Can Black Beans

2/3 tsp Cumin

2/3 tsp Paprika

Juice from 1/4 Lime

Directions

1. In a skillet, heat olive oil on medium to medium high heat. Add garlic and onions and saute 1-2 minutes

2. Add in rice and chicken broth. Bring to a boil. Reduce heat to low. Simmer, covered, approx. 15-20 minutes or until liquid is absorbed and rice is tender

3. Stir in remaining ingredients

1/8 tsp Sugar

Salt and Ground Pepper to Taste

2 Large Tomatoes, chopped

1/2 (14.5 oz) Can Diced Tomatoes

1 1/2 Green Onions

1/4 Red Onion, chopped

Juice from ½ Lime

1/2 Jalapeño Pepper, seeded and chopped

1/2 Clove Garlic, minced

1/8 tsp Sugar
