Lunch: Everything But the Bagel Roasted Chicken Quinoa Salad

4 Chicken Tenderloins

2 Cups Broccoli Florets

1/2 Cup Quinoa, uncooked

1 Cup Water

1 tsp Everything But the Bagel Seasoning

1/2 Tbsp Extra Virgin Olive Oil

Salt and Ground Black Pepper to Taste

4 Cups Broccoli Florets

1 Cup Quinoa, uncooked

2 Cups Water

2 tsp Everything But the Bagel Seasoning

1 Tbsp Extra Virgin Olive Oil

Salt and Ground Black Pepper to Taste

12 Chicken Tenderloins

6 Cups Broccoli Florets

1 1/2 Cup Quinoa, uncooked

3 Cups Water

3 tsp Everything But the Bagel Seasoning

1 1/2 Tbsp Extra Virgin Olive Oil

Salt and Ground Black Pepper to Taste

Directions

1. Preheat oven to 400 degrees and line a sheet pan with foil.

2. Coat chicken w/Everything But the Bagel seasoning and place on sheet pan.

3. Toss broccoli in olive oil and place on sheet pan along with chicken.

4. Roast in oven for 12-15 minutes, turning halfway through, or until chicken is cooked through and broccoli has begun to brown.

5. Bring water to a boil, add quinoa and cook according to package directions.

6. Arrange in a bowl and salt and pepper to taste.




Dinner: Veggie and Beef Nachos

½ Lb Ground Beef (organic grass fed is the best)

2 Tbsp Taco Seasoning (store bought can be used, but homemade recipe below)

½ (15 oz) Can Black Beans

½ Lb Mini Sweet Peppers

½ Cup Grape Tomatoes, sliced in thirds

½ Cup Mexican Blend Cheese, shredded

Cooking spray



1 Lb Ground Beef (organic grass fed is the best)

4 Tbsp Taco Seasoning (store bought can be used, but homemade recipe below)

1 (15 oz) Can Black Beans

1 Lb Mini Sweet Peppers

1 Cup Grape Tomatoes, sliced in thirds

1 Cup Mexican Blend Cheese, shredded

1 1/2 (15 oz) Cans Black Beans

1 1/2 Lb Mini Sweet Peppers

Directions

1. Preheat oven to 400 degrees.

2. In a skillet, add ground beef and taco seasoning and cook on medium to medium high heat for approx 10 minutes, crumbling it as it cooks.

3. Once meat has cooked, drain off any excess fat and stir in black beans.

4. Slice peppers in half lengthwise and clean out any seeds.

5. Fill pepper halves with meat mixture, top with tomatoes and shredded cheese.

6. Line a sheet pan with foil and lightly spray it with cooking spray.

7. Place stuffed peppers on the baking sheet and bake in oven for 5 minutes or until cheese is melted.

Mexican Riced Cauliflower
