Lunch: Caprese Sandwich w/Balsamic Glaze

4 Slices Whole Grain Bread

4 Thin Slices Fresh Mozzarella

1 Roma Tomatoes, sliced

1/2 Cup Spinach

1 Tbsp Store Bought Pesto

2 Tbsp Extra Virgin Olive Oil `

1/4 Cup Balsamic Vinegar

1 Tbsp Honey



8 Slices Whole Grain Bread

8 Thin Slices Fresh Mozzarella

2 Roma Tomatoes, sliced

1 Cup Spinach

2 Tbsp Store Bought Pesto

4 Tbsp Extra Virgin Olive Oil `

1/2 Cup Balsamic Vinegar

2 Tbsp Honey

12 Slices Whole Grain Bread

12 Thin Slices Fresh Mozzarella

3 Roma Tomatoes, sliced

1 1/2 Cup Spinach

3 Tbsp Store Bought Pesto

6 Tbsp Extra Virgin Olive Oil `

3/4 Cup Balsamic Vinegar

3 Tbsp Honey

 

Directions

1. In a sauce pan, bring balsamic vinegar and honey to a simmer on medium to medium high heat and allow to reduce down to about half.

2. Remove from heat and cool.

3. Spread pesto on all pieces of bread and layer mozzarella, tomatoes, spinach. Salt and pepper to taste.

4. Drizzle with glaze and top off with remaining slices of bread.

5. Heat olive oil in skillet on medium to medium high heat and toast sandwiches in skillet until golden brown on each side.




Dinner: Shrimp Tacos w/Salsa

1/2 Lb Peeled, Deveined, Tails Off Medium-Large Shrimp, fresh or frozen

4 Corn Tortillas

1 1/2 Tbsp Extra Virgin Olive Oil

1 Lime, juiced

1/2 Cloves Garlic, minced

1 Tbsp Fresh Cilantro, chopped

1 Tbsp Taco Seasoning (store bought can be used, but homemade recipe below)

1 Lb Peeled, Deveined, Tails Off Medium-Large Shrimp, fresh or frozen

8 Corn Tortillas

3 Tbsp Extra Virgin Olive Oil

2 Limes, juiced

1 Cloves Garlic, minced

2 Tbsp Fresh Cilantro, chopped

2 Tbsp Taco Seasoning (store bought can be used, but homemade recipe below)

1 1/2 Lb Peeled, Deveined, Tails Off Medium-Large Shrimp, fresh or frozen

12 Corn Tortillas

4 1/2 Tbsp Extra Virgin Olive Oil

3 Limes, juiced

1 1/2 Cloves Garlic, minced

3 Tbsp Fresh Cilantro, chopped

3 Tbsp Taco Seasoning (store bought can be used, but homemade recipe below)

Directions

1. If using frozen shrimp, thaw according to package directions.

2. In a large bowl, mix together ⅓ of olive oil, all of lime juice, garlic, taco seasoning, and cilantro.

3. Add shrimp and marinate for 30 minutes in refrigerator.

4. Once shrimp has marinated, heat remaining olive oil on medium- medium high heat in a large skillet.

5. Add shrimp and marinate to skillet and cook for approx. 3 minutes per side or until shrimp is opaque being careful not to overcook.

7. Warm tortillas in oven.

8. Top with toppings of choice.

1. Combine all ingredients in food processor or blender and pulse until all ingredients are finely chopped or until desired consistency.
