Lunch: Cucumber and Herbed Mayo Sandwiches

Directions

1. Spread bread with herbed mayo and layer cucumber slices evenly on one slice of bread on top of mayo.

2. Top cucumber with other slice of bread.

Dinner: Beef Tostadas

1/2 Lb 80/20 Ground Beef or Ground Sirloin

1/2 (14.5 oz) Can Black Beans

1/8 Onion  

1 Tbsp Homemade Taco Seasoning-Recipe Below- (Store bought can be used, but homemade recipe below)  

1/2 Cup Shredded Mexican Blend Cheese

1 Avocado

1/2 Cup Tomatoes

1/2 Cup Spinach or Lettuce

8 Tostadas

1 Lb 80/20 Ground Beef or Ground Sirloin

1 (14.5 oz) Can Black Beans, rinsed and drained

¼ Onion, diced

2 Tbsp Homemade Taco Seasoning-Recipe Below-(Store bought can be used, but homemade recipe below)

1 Cup Shredded Mexican Blend Cheese

2 Avocados

1 Cup Tomatoes, diced

1 Cup Spinach or Lettuce, chopped



12 Tostadas

1 1/2 Lbs 80/20 Ground Beef or Ground Sirloin

1 1/2 (14.5 oz) Cans Black Beans

1/3 Onion, diced

3 Tbsp Homemade Taco Seasoning (Store bought can be used, but homemade recipe below)

1 1/2 Cups Shredded Mexican Blend Cheese

3 Avocados, rinsed, peeled, seeded and chopped

1 1/2 Cups Tomatoes, diced

1 1/2 Cups Spinach or Lettuce, finely chopped

Directions

1. Preheat oven to 350 degrees.

2. Cook ground beef in a large skillet on med-med high heat until browned and cooked through. Drain.

3. Reduce heat and add onion, taco seasoning, and black beans. Heat thoroughly.

3. On a large sheet pan, heat tostadas for approx. 3 minutes.

4. Remove tostadas from oven and assemble them, beginning with meat mixture.

Cilantro Lime Rice

1/2 Cup Basmati Rice

1 Cup Chicken Broth

1 Tbsp plus 1 tsp Extra Virgin Olive Oil

1 1/2 Tbsp Lime Juice

1/2 Cup Cilantro, finely chopped

Salt and Pepper to Taste

2 Tbsp plus 2 tsp Extra Virgin Olive Oil

3 Tbsp Lime Juice

1 Cup Cilantro, finely chopped

1 1/2 Cups Basmati Rice

3 Cups Chicken Broth

3 Tbsp plus 2 tsp Extra Virgin Olive Oil

4 1/2 Tbsp Lime Juice

1 1/2 Cups Cilantro, finely chopped

Directions

1. Bring broth to a boil and add rice.

2. Reduce heat and cook for approx. 15-20 minutes, until liquid is absorbed and rice is fluffy.

3. Stir in all other ingredients.
