Lunch: On The Go Lunch Bowl

1 (14.5 oz) Can Chickpeas, rinsed and drained

1 Cucumber, rinsed and chopped

1 Large Tomato, rinsed and chopped

1 Bell Pepper, rinsed and chopped

½ Cup Fresh Basil, chopped

4 Green Onions, rinsed and chopped

2 Tbsp Extra Virgin Olive Oil

1 tsp Vinegar

6 Kalamata Olives, pitted and chopped

Salt and Pepper to Taste

2 (14.5 oz) Cans Chickpeas, rinsed and drained

2 Large Tomatoes, rinsed and chopped

2 Bell Peppers, rinsed and chopped

1 Cup Fresh Basil, chopped

8 Green Onions, rinsed and chopped

4 Tbsp Extra Virgin Olive Oil

2 tsp Vinegar

12 Kalamata Olives, pitted and chopped

3 (14.5 oz) Cans Chickpeas, rinsed and drained

Directions

1. Rinse and drain chickpeas. Set aside in a medium sized bowl

2. Rinse, dry and chop all veggies

3. Add veggies to chickpeas and mix together

4. Mix in olive oil and vinegar

5. Salt and pepper to taste


Dinner: Shrimp Tacos

1/2-1 Lbs Peeled, Deveined, Tails Off Medium-Large Shrimp, fresh or frozen

4 Corn Tortillas

1 1/2 Tbsp Extra Virgin Olive Oil

1 Limes, juiced

1/2 Clove Garlic, minced

1 Tbsp Fresh Cilantro, chopped

1 Tbsp Taco Seasoning (store bought can be used, but homemade recipe below)

1-1 1/2 Lbs Peeled, Deveined, Tails Off Medium-Large Shrimp, fresh or frozen

8 Corn Tortillas

3 Tbsp Extra Virgin Olive Oil

2 Limes, juiced

2 Tbsp Fresh Cilantro, chopped

2 Tbsp Taco Seasoning (store bought can be used, but homemade recipe below)

1 1/2-2 Lbs Peeled, Deveined, Tails Off Medium-Large Shrimp, fresh or frozen

4 1/2 Tbsp Extra Virgin Olive Oil

3 Limes, juiced

1 1/2 Cloves Garlic, minced

3 Tbsp Fresh Cilantro, chopped

3 Tbsp Taco Seasoning (store bought can be used, but homemade recipe below)

Directions

1. If using frozen shrimp, thaw according to package directions

2. In a large bowl, mix together ⅓ of olive oil, all of lime juice, garlic, taco seasoning, and cilantro

3. Add shrimp and marinate for 30 minutes in refrigerator

4. Once shrimp has marinated, heat remaining olive oil on medium- medium high heat in a large skillet

5. Add shrimp and marinate to skillet and cook for approx. 3 minutes per side or until shrimp is opaque being careful not to overcook

6. Warm tortillas in oven

7. Top with toppings of choice

1. Combine all ingredients in food processor or blender and pulse until all ingredients are finely chopped or until desired consistency
