Lunch: Fruited Chicken Salad

1 Chicken Breast, cooked

¼ Cup Mayonnaise

½ Cup Apples, diced

⅛ Cup Sweet Pickle Relish

Salt and Pepper to Taste

2 Chicken Breasts, cooked

3 Chicken Breast, cooked

3/4 Cup Mayonnaise

Directions

1. Bring medium sliced pot of water to a boil

2. Add chicken and boil for approximately 25-30 minutes or until cooked through

3. Once cooked, remove chicken from heat and water and chop very finely or process in a blender. Allow to cool completely

4. While chicken is cooling, rinse and dice apple

5. When chicken has cooled, mix all ingredients together in a medium bowl and chill in refrigerator until ready to serve


Dinner: Chicken Enchiladas

1 Chicken Breast, cut into bite sized pieces

1 (8 oz) Can Tomato Sauce

1/2 Cup Chicken Broth

1/2 (14.5 oz) Can Black Beans, rinsed and drained

1/2 Ear Fresh Corn, removed from the cob

4 Whole Wheat Tortillas

1/8 Cup Cilantro, chopped

1/4 Cup Sharp Cheddar Cheese, shredded

1 ½ Tbsp Extra Virgin Olive Oil

Directions

1. Preheat oven to 350 degrees

2. Grease glass baking dish with 1/3rd of the olive oil

3. Heat remaining olive oil in a large skillet on medium-medium high heat and add onions. Sauté for approx. 3-5 minutes or until translucent

4. Add chicken and salt and pepper to skillet

5. Cook chicken, stirring frequently, until cooked through, approx 6-8 minutes

6. Add in other spices and garlic, stirring while continuing to cook until chicken is coated

7. Add remaining ingredients to the skillet, cover, and cook for an additional 10 minutes on low-medium heat

8. Remove from the heat

9. Drain the sauce from the chicken, reserving it on the side

10. Spoon chicken mixture into each tortilla evenly and roll up tightly, placing seam side down in the baking dish

11. Pour reserved sauce over tortillas, top with cheese and bake for 20 minutes
