Lunch: Greek Yogurt Fruit Bowl w/Almonds

2 Cups Whole Milk Plain Greek Yogurt

1/2 Cup Cantaloupe, chopped

1/2 Cup Blueberries

1/2 Cup Strawberries, sliced

1/2 Cup Peaches, chopped

1/2 Cup Pineapple, peeled and chopped

2 Tbsp Roasted Almonds w/Sea Salt

2 Tbsp Chia Seeds (optional)

4 Cups Whole Milk Plain Greek Yogurt

1 Cup Cantaloupe, chopped

1 Cup Blueberries

1 Cup Strawberries, sliced

1 Cup Peaches, chopped

1 Cup Pineapple, peeled and chopped

4 Tbsp Roasted Almonds w/Sea Salt

4 Tbsp Chia Seeds (optional)

6 Cups Whole Milk Plain Greek Yogurt

1 1/2 Cups Cantaloupe, chopped

1 1/2 Cups Blueberries

1 1/2 Cups Strawberries, sliced

1 1/2 Cups Peaches, chopped

1 1/2 Cups Pineapple, peeled and chopped

6 Tbsp Roasted Almonds w/Sea Salt

6 Tbsp Chia Seeds (optional)

Directions

1. Put yogurt into individual bowls

2. Layer fruit evenly between the bowls in order of preference

3. Top w/almonds and chia seeds



Dinner: Taco Salad

1/2 Tbsp Extra Virgin Olive Oil

1 1/4 Tbsp Homemade Taco Seasoning (Store bought can be used)

1/2 Lb 80/20 Ground Beef

4 Cups Romaine Lettuce, chopped

1/2 Cup Grape Tomatoes, halved

1/8 Cup Red Onion, diced

2/3 Cup Mexican Shredded Cheese

1/4 (14.5 oz) Can of Canned Corn, drained

1/4 (14.5 oz) Can of Black Beans, rinsed and drained

1/2 Avocado, peeled, seeded and chopped

Salt and Pepper to Taste

1 Tbsp Extra Virgin Olive Oil

2 ½ Tbsp Homemade Taco Seasoning (Store bought can be used)

1 Lb 80/20 Ground Beef

Directions

1. Put olive oil, beef and taco seasoning into a skillet and cook on med-med high heat for approx. 10 minutes or until there is no pink. Break meat up as it cooks

2. Remove meat from heat and drain off any excess fat

3. Mix together dressing ingredients very well and refrigerate until ready to use

4. Layer all ingredients to individual bowls or plates, beginning w/lettuce and ending w/cheese and dressing
