Lunch: Peach and Blackberry Grilled Cheese

Number of Servings

4 Slices Whole Wheat Bread

4 Slices Fresh Peach, seeded

6 oz Fresh Blackberries

2 Slices Fresh Mozzarella

2 Tbsp butter

8 Slices Whole Wheat Bread

8 Slices Fresh Peach, seeded

12 oz Fresh Blackberries

4 Slices Fresh Mozzarella

4 Tbsp butter



12 Slices Whole Wheat Bread

12 Slices Fresh Peach

18 oz Fresh Blackberries

6 Slices Fresh Mozzarella

6 Tbsp butter

Directions

1. Mash blackberries with a fork in a small bowl and set aside

2. Assemble sandwiches in the following order.

A. Peach slices

B. Mozzarella

C. Blackberries, spread on inside of top piece of bread

3. Heat butter in a skillet on medium heat until melted.

4. Carefully place the sandwiches in the skillet and cook approx. 2 ½ minutes per side or until cheese has melted and both sides of each sandwich is golden brown.


Dinner: Taco Salad

Number of Servings

1/2 Tbsp Extra Virgin Olive Oil

1 1/4 Tbsp Homemade Taco Seasoning (Store bought can be used)

1/2 Lb 80/20 Ground Beef

4 Cups Romaine Lettuce, chopped

1/2 Cup Grape Tomatoes, halved

1/8 Cup Red Onion, diced

2/3 Cup Mexican Shredded Cheese

1/4 (14.5 oz) Can of Canned Corn, drained

1/4 (14.5 oz) Can of Black Beans, rinsed and drained

1/2 Avocado, peeled, seeded and chopped

Salt and Pepper to Taste

1 Tbsp Extra Virgin Olive Oil

2 ½ Tbsp Homemade Taco Seasoning (Store bought can be used)

1 Lb 80/20 Ground Beef

Directions

1. Put olive oil, beef and taco seasoning into a skillet and cook on med-med high heat for approx. 10 minutes or until there is no pink. Break meat up as it cooks.

2. Remove meat from heat and drain off any excess fat.

3. Mix together dressing ingredients very well and refrigerate until ready to use.

4. Layer all ingredients to individual bowls or plates, beginning w/lettuce and ending w/cheese and dressing.

Dressing

1/2 Cup Greek Yogurt

1/2 Cup Salsa (Store bought can be used)

1 Tbsp Cilantro, finely chopped

1 Cup Greek Yogurt

1 Cup Homemade Salsa (Store bought can be used)

Homemade Taco Seasoning

1 Tbsp Chili Powder

1/2 Tbsp Cumin

1/2 tsp Paprika

1/2 tsp Salt

1/4 tsp Garlic Powder

1/4 tsp Onion Powder

1/4 tsp Oregano

1/4 tsp Black Pepper

 

1 Tbsp Chili Powder

Directions

1. Put all ingredients into a small container with a lid and shake until mixed.

Homemade Salsa

1 Large Tomato, chopped

1/4 (14.5 oz) Can Diced Tomatoes

3/4 Green Onion

1/8 Red Onion, chopped

1/2 Tbsp Fresh Lime Juice

1/4 Jalapeño Pepper, seeded and chopped

1/4 Clove Garlic, minced

1/8 tsp Sugar

Salt and Ground Pepper to Taste

2 Large Tomatoes, chopped

1/2 (14.5 oz) Can Diced Tomatoes

1 1/2 Green Onions

1/4 Red Onion, chopped

1 Tbsp Fresh Lime Juice

1. Combine all ingredients in food processor or blender and pulse until all ingredients are finely chopped or until desired consistency.
