Lunch: Greek Wrap

1/2 Cup Cucumber

1/2 Cup Grape Tomatoes, halved

1/2 Cup Kalamata Olives, halved

2 Tbsp Red Onion, finely diced

4 Tbsp Feta Cheese, crumbled

1/2 Cup Spinach, chopped

2 Tbsp Store Bought Hummus

2 Whole Grain Wraps

1 1/2 Cups Kalamata Olives, halved

6 Tbsp Red Onion, finely diced

12 Tbsp Feta Cheese, crumbled

6 Whole Grain Wraps

6 Tbsp Store Bought Hummus

Directions

1. In a bowl whisk together dressing and set aside.

2. In a separate bowl, toss together all other ingredients except hummus and wraps. Pour dressing over salad and gently toss together.

3. Evenly spread hummus on each wrap and evenly add salad to wrap and roll or fold up.

Directions

1. Preheat oven to 350 degrees.

2. Lightly spray baking dish with cooking spray.

3. In a skillet on medium to medium high heat olive oil, and brown cauliflower for approx. 5 minutes and remove from heat. Spread cauliflower into bottom of baking dish.

4. In the same skillet, cook ground turkey, bell pepper, onion, and until all pink is gone in meat, approx. 10 minutes.

5. Once turkey has cooked, mix in taco seasoning, tomato sauce, and water.

6. Layer turkey mixture on top of cauliflower and top with cheese.

7. Bake in oven for 10 minutes. Spread Greek yogurt on top.

8. Top with favorite toppings.
