Lunch: Greek Chicken Pita

1 Large Chicken Breast, cooked and diced

1 Pita, halved

¼ English Cucumber, diced

½ Cup Grape Tomatoes, halved

½ Cup Pitted Kalamata Olives, halved

⅛ Small Red Onion, finely diced

⅓ Cup Spinach, chopped

½ Cup Feta Cheese, crumbled

1 Tbsp Extra Virgin Olive Oil

½ Tbsp Balsamic Vinegar

Juice from ¼ Lemon

½ Tbsp Fresh Oregano or ½ tsp dried

Salt and Ground Black Pepper to Taste

4 Tbsp Tzatziki Sauce (Store bought can be used- see below for homemade dairy free recipe)

1 Tbsp Fresh Oregano or 1 tsp dried

Salt and Ground Black Pepper to Taste

8 Tbsp Tzatziki Sauce (Store bought can be used- see below for homemade dairy free recipe)

12 Tbsp Tzatziki Sauce (Store bought can be used- see below for homemade dairy free recipe)

Directions

1. Bring medium pot of water to a boil. Add chicken and cook for approx. 25-30 minutes or until cooked through. Remove from water, dice, and allow to cool.

2. While chicken is cooling, dice cucumber and onion and then half tomatoes and olives. Chop spinach

3. Once chicken has cooled, combine all of these ingredients

4. Gently mix in feta cheese

5. Whisk together olive oil, balsamic vinegar, lemon juice, oregano, salt and pepper and stir into chicken and vegetable mixture

6. Lightly toast pita, half and stuff with chicken and vegetable mixture

7. Drizzle with tzatziki sauce

Homemade Dairy Free Tzatziki Sauce

Juice of 1/2 Lemon

1 Tbsp Fresh Dill or 2 tsp Dried

1/4 Cup Full Fat Canned Coconut Milk

1/4 Cup Mayonnaise

¼ English Cucumber

¼ tsp Onion Powder

½ Clove Garlic, minced

Juice of ½ Lemon

2 Tbsp Fresh Dill or 2 tsp Dried

½ Cup Full Fat Canned Coconut Milk

½ Cup Mayonnaise

1/3 English Cucumber

1/3 tsp Onion Powder

3/4 Clove Garlic, minced

Juice of 1 ½ Lemons

3 Tbsp Fresh Dill or 2 tsp Dried

  1. Put all ingredients into a blender and blend until smooth

½ Can Refried Beans

½ Cup Salsa (Store bought can be used, but homemade recipe below)

¼ Red Onion, finely diced

½ Bell Pepper, diced

½ Jalapeño, seeded and finely diced

½ Cup Mexican Blend Shredded Cheese

½ Cup Black Olives, sliced

½ Cup Tomatoes, diced

4 Naan Pizza Crusts

1 Can Refried Beans

1 Cup Salsa (Store bought can be used, but homemade recipe below)

1/2 Red Onion, finely diced

1 Bell Pepper, diced

1 Jalapeño, seeded and finely diced

1 Cup Mexican Blend Shredded Cheese

1 Cup Black Olives, sliced

1 Cup Tomatoes, diced

6 Naan Pizza Crusts

1 1/2 Cans Refried Beans

1 1/2 Cups Salsa (Store bought can be used, but homemade recipe below)

3/4 Red Onion, finely diced

1 1/2 Bell Peppers, diced

1 1/2 Jalapeños, seeded and finely diced

1 1/2 Cups Mexican Blend Shredded Cheese

1 1/2 Cups Black Olives, sliced

1 1/2 Cups Tomatoes, diced

Directions

1. Preheat oven to 425 degrees

2. Mix together refried beans and salsa and spread on each crust

3. Layer onion, bell pepper, tomatoes, and jalapeño

4. Sprinkle on cheese and then olives

5. Bake for approx. 10 minutes or until cheese is melted.
