Lunch: Strawberry Chicken Wrap w/ Red Wine Vinaigrette

½ Lb Chicken Tenderloins, diced

1 ½ Cups Spinach

½ Cup Strawberries, Sliced

¼ Cup Red Onions

½ Cup Blue Cheese

Salt and Ground Black Pepper to Taste

1 Tbsp Worcestershire

2 Medium Sized Tortillas

Red Wine Vinaigrette (Store bought can be used, but homemade recipe below)

1 Lb Chicken Tenderloins, diced

3 Cups Spinach

1 Cup Strawberries, Sliced

1/2 Cup Red Onions

1 Cup Blue Cheese

Salt and Pepper to Taste

2 Tbsp Worcestershire

4 Medium Sized Tortillas

1 1/2 Lb Chicken Tenderloins, diced

4 1/2 Cups Spinach

1 1/2 Cup Strawberries, Sliced

3/4 Cup Red Onions

1 1/2 Cup Blue Cheese

6 Medium Sized Flour Tortillas

Directions

1. Preheat oven to 350 degrees

2. Lightly spray baking dish and place chicken into it

3. Drizzle chicken with Worcestershire and then salt and pepper to taste

4. Roast chicken in oven for 30-35 minutes or until cooked through

5. While chicken is roasting, toss together spinach strawberries, red onions, and blue cheese

6. Once chicken has cooked, dice, allow to cool, and toss into other ingredients

7. Gently mix dressing into salad mixture, place evenly on tortillas and wrap up tortillas

Dinner: Shrimp Fajita Quesadillas w/Black Beans and Tomatoes

6 oz Shrimp, peeled, deveined, and tails removed

2 Tbsp Taco Seasoning (store bought can be used, but homemade recipe below)

2 Tbsp Extra Virgin Olive Oil

½ Cup Bell Pepper, thinly sliced

½ Cup Onion, thinly sliced

1 Cup Pepper Jack Cheese, shredded

12 oz Shrimp, peeled, deveined, and tails removed

18 oz Shrimp, peeled, deveined, and tails removed

6 Tbsp Taco Seasoning (store bought can be used, but homemade recipe below)

6 Tbsp Extra Virgin Olive Oil

1 1/2 Cup Bell Pepper, thinly sliced

1 1/2 Cup Onion, thinly sliced

3 Cup Pepper Jack Cheese, shredded

12 Flour Tortillas

Directions

1. Toss shrimp until covered in taco seasoning

2. Heat olive oil in a medium skillet on medium high heat

3. Add shrimp to skillet and cook for approx 2-3 minutes on each side or until opaque

4. Remove shrimp to a plate and set aside

5. Add peppers and onions to same skillet as shrimp and sauté on medium high heat for approx 3 minutes, stirring frequently

6. Assemble fajita quesadillas by equally adding ingredients to the tortillas and folding each tortilla in half

7. In a skillet lightly sprayed with cooking spray and heated on medium high heat, place filled tortillas and cook until golden brown on each side and cheese is melted, about 2-3 minutes per side
