Lunch: Quinoa Black Bean Salad

1 Cup Water

1/2 Cup Quinoa

1/2 (14.5 oz) Can Black Beans

½ Avocado, seeded, peeled and diced

1/8 Cup Red Onion, diced

6 Grape Tomatoes, halved

1/8 Cup Cilantro, chopped

Juice of 1 Lime

1 Tbsp Extra Virgin Olive Oil

 

2 Cups Water

1 Cup Quinoa

1 (14.5 oz) Can Black Beans

1 Avocado, seeded, peeled and diced

¼ Cup Red Onion, diced

12 Grape Tomatoes, halved

¼ Cup Cilantro, chopped

Juice of 1 Lime

2 Tbsp Extra Virgin Olive Oil



3 Cups Water

1 1/2 Cup Quinoa

1 1/2 (14.5 oz) Can Black Beans

1 ½ Avocados, seeded, peeled and diced

1/3 Cup Red Onion, diced

18 Grape Tomatoes, halved

1/3 Cup Cilantro, chopped

Juice of 1 Lime

3 Tbsp Extra Virgin Olive Oil

Directions

1. Bring water to a boil and add quinoa.  

2. Cook until all water is absorbed.  

3. Once quinoa has cooked, remove from heat and allow to cool completely.  

4. Once cooled, gently stir in all other ingredients.

5. Serve chilled.




Dinner: Chicken Enchiladas

1 Chicken Breasts, cut into bite sized pieces

1 Clove Garlic, minced

1/4 tsp Salt

1/8 tsp Ground Black Pepper

1/4 tsp Dried Oregano

1/4 tsp Paprika

1 (8 oz) Can Tomato Sauce

1/2 Cup Chicken Broth

1/2 (14.5 oz) Can Black Beans, rinsed and drained

1/2 Ear Fresh Corn, removed from the cob

4 Whole Wheat Tortillas

1/8 Cup Cilantro, chopped

1/4 Cup Sharp Cheddar Cheese, shredded

1 ½ Tbsp Extra Virgin Olive Oil

½ Onion, finely diced

3/4 Cup Sharp Cheddar Cheese, shredded

Directions

1. Preheat oven to 350 degrees.

2. Grease glass baking dish with ¼ Tbsp olive oil.

3. Heat remaining ½ Tbsp olive oil in a large skillet on medium-medium high heat and add onions. Sauté for approx. 3-5 minutes or until translucent.

4. Add chicken and salt and pepper to skillet.

5. Cook chicken, stirring frequently, until cooked through, approx 6-8 minutes.

5. Add in other spices and garlic, stirring while continuing to cook until chicken is coated.

6. Add remaining ingredients to the skillet, cover, and cook for an additional 10 minutes on low-medium heat.

7. Remove from the heat.

8. Drain the sauce from the chicken, reserving it on the side.

9. Spoon chicken mixture into each tortilla evenly and roll up tightly, placing seam side down in the baking dish.

10. Pour reserved sauce over tortillas, top with cheese and bake for 20 minutes.

1 1/2 Green Onions

1/4 Red Onion, chopped

1 Tbsp Fresh Lime Juice

1/2 Jalapeño Pepper, seeded and chopped

1/2 Clove Garlic, minced

1/8 tsp Sugar

Salt and Ground Pepper to Taste

 

3 Large Tomatoes, chopped

3/4 (14.5 oz) Can Diced Tomatoes

2 1/4 Green Onions

1/3 Red Onion, chopped
