Lunch:
Chickpea and Veggie Soup

1 (14.5 oz) Can Chickpeas, rinsed and drained

1/2 (14.5 oz) Can Diced Tomatoes, undrained

2 Cups Chicken Broth

2 Tbsp Extra Virgin Olive Oil

1/2 Yellow Onion, diced

1/2 Cup Celery, diced

1/2 Cup Carrots, diced

2 Cloves Garlic, minced

1/4 tsp Turmeric

1 Bay Leaf

Salt and Ground Black Pepper to Taste

4 Cups Chicken Broth

4 Tbsp Extra Virgin Olive Oil

1 Yellow Onion, diced

1 Cup Celery, diced

1 Cup Carrots, diced

4 Cloves Garlic, minced

½ tsp Turmeric

2 Bay Leaves

Salt and Ground Black Pepper to Taste

3 (14.5 oz) Cans Chickpeas, rinsed and drained

1 1/2 (14.5 oz) Cans Diced Tomatoes, undrained

6 Cups Chicken Broth

6 Tbsp Extra Virgin Olive Oil

1 1/2 Yellow Onions, diced

1 1/2 Cups Celery, diced

1 1/2 Cups Carrots, diced

6 Cloves Garlic, minced

3/4 tsp Turmeric

3 Bay Leaves

Salt and Ground Black Pepper to Taste

 

Directions

1. Heat oil in a medium-large pot and saute onion, celery, carrots, and garlic 6-8 minutes or until tender

2. Gently stir in all other ingredients and simmer for 15-20 minutes

 


Dinner:
Honey Garlic Shrimp on Pasta

1/2 Lb Shrimp, peeled and deveined

1/2 (12 oz) Pkg Frozen Broccoli Florets

1 Tbsp Extra Virgin Olive Oil

1/4 Lb Thin Spaghetti Noodles

Green Onions for Garnish, diced

 

Sauce

1/2 Clove Garlic, minced

1/4 tsp Ground Ginger

2 Tbsp Honey

1 1/2 Tbsp Soy Sauce

 

1 Lb Shrimp, peeled and deveined

1 (12 oz) Pkg Frozen Broccoli Florets

2 Tbsp Extra Virgin Olive Oil

½ Lb Thin Spaghetti Noodles

Green Onions for Garnish, diced

 

Sauce

1 Clove Garlic, minced

½ tsp Ground Ginger

4 Tbsp Honey

3 Tbsp Soy Sauce

1 1/2 Lb Shrimp, peeled and deveined

1 1/2 (12 oz) Pkgs Frozen Broccoli Florets

3 Tbsp Extra Virgin Olive Oil

3/4 Lb Thin Spaghetti Noodles

Green Onions for Garnish, diced

 

Sauce 

 

1 1/2 Cloves Garlic, minced

3/4 tsp Ground Ginger

6 Tbsp Honey

4 1/2 Tbsp Soy Sauce

 

 

Directions

1. Combine sauce ingredients and divide in half

2. Marinate shrimp in 1/2 of sauce for 15-20 minutes

3. While shrimp is marinating, cook spaghetti and broccoli according to package directions and set aside

4. Heat olive oil in a large skillet on medium to medium high heat

5. Add shrimp to skillet and cook approx 2 minutes per side or until opaque

6. Remove shrimp from heat and stir in broccoli and remaining sauce

7. Heat on low until heated through

8. Remove from heat and serve over spaghetti
