Lunch: Shrimp and Spinach BBQ Ranch Salad

1/2 Lb Large Shrimp, peeled and deveined

4 Cups Spinach

1 Cup Grape Tomatoes, halved

1/2 Cup Carrots, diced

2 oz Goat Cheese, crumbled

8 Tbsp Store Bought Bbq Sauce, divided

1/2 tsp Hidden Valley Ranch Dressing Mix

1 Tbsp Extra Virgin Olive Oil

Cooking Spray

1 Lb Large Shrimp, peeled and deveined

16 Tbsp Store Bought Bbq Sauce, divided

1 tsp Hidden Valley Ranch Dressing Mix

2 Tbsp Extra Virgin Olive Oil

Cooking Spray

1 1/2 Lb Large Shrimp, peeled and deveined

12 Cups Spinach

3 Cups Grape Tomatoes, halved

1 1/2 Cups Carrots, diced

6 oz Goat Cheese, crumbled

24 Tbsp Store Bought Bbq Sauce, divided

1 1/2 tsp Hidden Valley Ranch Dressing Mix

3 Tbsp Extra Virgin Olive Oil

Cooking Spray

Directions

1. Preheat oven to 400 degrees

2. In a small bowl mix together 1/2 bbq sauce, ranch dressing mix, and olive oil

3.Place shrimp on a foil lined sheet pan lightly sprayed with cooking spray and coat with ranch dressing mixture

4.Roast for 10-12 minutes or until shrimp is opaque being careful not to overcook and flipping halfway through

5. Evenly Layer other salad ingredients on plates and top with shrimp

6. Drizzle with remaining bbq sauce

Maple Pecan Salmon w/Sweet Potatoes

2 (4 oz) Salmon Fillets

4 Tbsp Pecans, chopped

½ tsp Cinnamon

½ tsp Nutmeg

2 Tbsp Maple Syrup

1 tsp Apple Cider Vinegar

1 1/2 tsp Cinnamon

1 1/2 tsp Nutmeg

3 tsp Apple Cider Vinegar

Directions

1. Preheat oven to 400 degrees

2. In a small bowl, mix together all crust ingredients

3. Lightly spray baking dish with cooking spray

4. Evenly divide pecan mixture between each salmon fillet and top each fillet with the pecan mixture

5. Bake in oven 10-15 minutes, or until salmon easily flakes. Watch closely so crust doesn’t burn

6. After removed from oven, drizzle with maple syrup

Stovetop Sweet Potatoes

Directions

1. Peel and dice sweet potatoes

2. In a skillet, heat olive oil on medium to medium high heat

3. Add sweet potatoes to skillet and saute, reducing heat if necessary, for approx. 10 minutes or until tender and beginning to brown

4. Salt and pepper to taste

5. Drizzle with maple syrup
