Lunch: Hummus Avocado Sandwich

4 Slices Whole Wheat Bread, toasted

2 Tbsp Store Bought Hummus

4 Slices Cucumber

2 Slices Tomato

1/2 Avocado, peeled, seeded and sliced

Salt and Ground Black Pepper to Taste

8 Slices Whole Wheat Bread, toasted

12 Slices Whole Wheat Bread, toasted

6 Tbsp Store Bought Hummus

12 Slices Cucumber

6 Slices Tomato

1 1/2 Avocados, peeled, seeded and sliced

Salt and Ground Black Pepper to Taste

Directions

1. Toast bread in oven or toaster.

2. Evenly spread hummus on one side of each piece of toast.

3. Evenly layer remainder of ingredients and salt and pepper to taste.


Dinner: Salmon Burgers w/Greek Potatoes

1/2 (15 oz) Can Alaskan Wild Caught Pink Salmon

1 Egg

1/4 Cup Oats, uncooked

1/4 tsp Garlic Powder

Salt and Ground Black Pepper to Taste

1/2 Tbsp Extra Virgin Olive Oil

2 Whole Wheat Hamburger Buns

 

1 (15 oz) Can Alaskan Wild Caught Pink Salmon

2 Eggs

½ Cup Oats, uncooked

½ tsp Garlic Powder

Salt and Ground Black Pepper to Taste

1 Tbsp Extra Virgin Olive Oil

4 Whole Wheat Hamburger Buns

1 1/2 (15 oz) Cans Alaskan Wild Caught Pink Salmon

3 Eggs

3/4 Cup Oats, uncooked

3/4 tsp Garlic Powder

Salt and Ground Black Pepper to Taste

1 1/2 Tbsp Extra Virgin Olive Oil

6 Whole Wheat Hamburger Buns

Directions

1. In a bowl, mix together all ingredients except olive oil and form mixture into patties.

2. In a skillet, heat olive oil on medium to medium high heat and add patties to skillet, reducing heat if necessary to avoid splattering.

3. Cook approx. 3 minutes per side or until each side is crisp and golden brown.

4. Serve on whole wheat buns w/your favorite burger toppings.

½ Tbsp Greek Seasoning

20 Baby Red Potatoes, halved

4 tsp Extra Virgin Olive Oil

1 Tbsp Greek Seasoning

 

30 Baby Red Potatoes, halved

6 tsp Extra Virgin Olive Oil

1 1/2 Tbsp Greek Seasoning

 

Directions

1. Preheat oven to 400 degrees

2. Place potatoes on sheet pan and toss in olive oil and Greek seasoning.

3. Roast in oven for 20 minutes, turning halfway through.
