Lunch: Fresh Tomato Basil Soup

1 1/4 Lbs Tomatoes, peeled and sliced

1/2 Onion, sliced

1/2 Tbsp Extra Virgin Olive Oil

1/4 Cup Fresh Basil

1/4 tsp Dried Oregano

1 Cup Chicken Broth

Salt and Pepper to Taste

2 ½ Lbs Tomatoes, peeled and sliced

1 Onion, sliced

1 Tbsp Extra Virgin Olive Oil

½ Cup Fresh Basil

½ tsp Dried Oregano

2 Cups Chicken Broth

Salt and Pepper to Taste

3 3/4 Lbs Tomatoes, peeled and sliced

1 1/2 Onions, sliced

1 1/2 Tbsp Extra Virgin Olive Oil

3/4 Cup Fresh Basil

3/4 tsp Dried Oregano

3 Cups Chicken Broth

Salt and Pepper to Taste

Directions

1. Heat olive oil on med-med high heat

2. Sauté onion for 5 minutes, until tender. Add garlic and sauté for 1 additional minute

3. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 15 minutes

4. Remove from heat and allow to cool for 15 minutes

4. Put into blender or use and immersion blender and purée

5. Add more salt and pepper if needed


Dinner: Stovetop Ground Turkey Burgers

1/2 Lb Ground Turkey

Salt and Pepper to taste

1 Lb Ground Turkey

1 1/2 Lb Ground Turkey

Directions

1. Shape meat into 4 equally sized patties. Press a dimple in the middle on one side of each patty

2. Sprinkle each side of patties with salt and pepper to taste.

3. Cook on medium-medium/high heat on stovetop for 10-15 minutes or until cooked through, flipping once half-way through **You might have to add a little water to the skillet to keep burgers from sticking and burning**

4. Serve on warmed whole wheat buns (or no buns at all) with your favorite toppings

Sweet Potato Fries

1 Medium-Large Sweet Potato

1/2 Tbsp Extra Virgin Olive Oil

1/4 tsp Salt

1/2 Clove Garlic, minced

2 Medium-Large Sweet Potatoes

3 Medium-Large Sweet Potatoes

1. Preheat oven to 400 degrees

2. Cut sweet potato into wedges

3. Place sweet potatoes on a large baking sheet and coat them with the olive oil, salt, and garlic

4. Bake for approx. 20 minutes, flipping half-way through

5. Potatoes should be tender and starting to brown
