Lunch: Hummus Avocado Sandwich

4 Slices Whole Wheat Bread, toasted

2 Tbsp Store Bought Hummus

4 Slices Cucumber

2 Slices Tomato

1/2 Avocado, peeled, seeded and sliced

Salt and Ground Black Pepper to Taste

8 Slices Whole Wheat Bread, toasted

4 Tbsp Store Bought Hummus

6 Tbsp Store Bought Hummus

1 1/2 Avocados, peeled, seeded and sliced

Directions

1. Toast bread in oven or toaster.

2. Evenly spread hummus on one side of each piece of toast.

3. Evenly layer remainder of ingredients and salt and pepper to taste.




Dinner: Turkey Burger w/Avocado Sauce and Roasted Potatoes

1/2 Cup Spinach

2 Slices Red Onion

2 Whole Wheat Buns

1 1/2 Lb Ground Turkey

1 1/2 Cups Spinach

Directions

1. Divide meat into equal sections and form into patties.

2. Salt and pepper each patty to taste.

3. Heat skillet on medium-medium high heat.

4. Place patties into skillet, reduce heat to low-medium and cook approx 12-15 minutes, flipping periodically.

5. Once cooked thoroughly, remove from heat.

6. Serve on whole wheat buns.

7. Top each patty avocado sauce, red onion, spinach, and tomato.

Directions

1. Put all ingredients into a blender and blend until smooth.

Directions

1. Preheat oven to 400 degrees.

2. Place potatoes on foil lined sheet pan with green beans, drizzle with olive oil, and salt and pepper to taste.

3. Roast in oven for 20 minutes.
