Lunch: Ultimate Salad w/Roasted Chicken

2 (6 oz) Boneless, Skinless Chicken Breasts

4 Cups Romaine Lettuce, chopped

1 Cup Carrots, diced

1 Cup Celery, diced

1 Cup Bell Pepper, diced

4 Tbsp Red Onion, diced

8 Grape Tomatoes

6 Slices Cucumber

4 Tbsp Oil and Vinegar Dressing

Salt and Ground Black Pepper to Taste



4 (6 oz) Boneless, Skinless Chicken Breasts

2 Cup Carrots, diced

2 Cup Celery, diced

2 Cup Bell Pepper, diced

8 Tbsp Red Onion, diced

16 Grape Tomatoes

12 Slices Cucumber

8 Tbsp Oil and Vinegar Dressing

Salt and Ground Black Pepper to Taste

6 (6 oz) Boneless, Skinless Chicken Breasts

12 Cups Romaine Lettuce, chopped

12 Tbsp Oil and Vinegar Dressing

Directions

1. Preheat oven to 400 degrees.

2. Salt and pepper chicken to taste and roast 30-40 minutes in oven, or until cooked through, depending on the thickness of the breasts.

3. On a plate arrange all other ingredients and top w/chicken.

4. Drizzle w/dressing.


Dinner: Sausage and White Bean Soup

4 oz Turkey Polska Kielbasa Sausage, sliced into coins and halved

1 Tbsp Extra Virgin Olive Oil

1/2 Cup Carrots, diced

1/2 Cup Celery, diced

1/2 Cup Onion, diced

1 Cloves Garlic, minced

1/2 (15 oz) Can Great Northern Beans, rinsed and drained

1/2 tsp Italian Seasoning

2 Cups Chicken Broth

1/2 Cup Almond Milk

1 Cup Fresh Spinach

Salt and Ground Black Pepper to Taste

8 oz Turkey Polska Kielbasa Sausage, sliced into coins and halved

2 Tbsp Extra Virgin Olive Oil

1 Cup Carrots, diced

1 Cup Celery, diced

1 Cup Onion, diced

1 (15 oz) Can Great Northern Beans, rinsed and drained

1 tsp Italian Seasoning

4 Cups Chicken Broth

1 Cup Almond Milk

2 Cups Fresh Spinach

Directions

1. In a pot, heat olive oil on medium to medium high heat.

2. Add sausage to pot and sauté for approx. 3 minutes.

3. Add in everything except almond milk, spinach and salt and pepper.

4. Bring to a simmer and simmer for approx. 30 minutes.

5. Stir in almond milk, and while continuing to simmer, add spinach. Cook for an additional 5 minutes, or until spinach has wilted.

6. Salt and pepper to taste.
