Lunch: Pimento Cheese w/ Bell Pepper and Onion

4 oz Sharp Cheddar Cheese, shredded

¼ Cup Green Bell Pepper, finely diced

2 Tbsp Red Onion, finely diced

2 oz Pimentos, undrained

2 Tbsp Olive Oil Mayonnaise

½ tsp Worcestershire Sauce

Salt and Ground Black Pepper to Taste

8 oz Sharp Cheddar Cheese, shredded

1/2 Cup Green Bell Pepper, finely diced

4 Tbsp Red Onion, finely diced

4 oz Pimentos, undrained

4 Tbsp Olive Oil Mayonnaise

1 tsp Worcestershire Sauce

Salt and Ground Black Pepper to Taste

 

12 oz Sharp Cheddar Cheese, shredded

3/4 Cup Green Bell Pepper, finely diced

6 Tbsp Red Onion, finely diced

Directions

1. In a bowl, mix all ingredients together very well.


Dinner: Chicken Avocado Burgers w/Sweet Potato Fries

½ Lb Ground Chicken

1 Tbsp Onion, diced

1 tsp Worcestershire Sauce

½ Tbsp Extra Virgin Olive Oil

Salt and Ground Black Pepper to Taste

1 Avocado, peeled, seeded and sliced

½ Cup Grape Tomatoes

½ Cup Fresh Spinach



1 Lb Ground Chicken

2 Tbsp Onion, diced

2 tsp Worcestershire Sauce

1 Tbsp Extra Virgin Olive Oil

Salt and Ground Black Pepper to Taste

2 Avocados, peeled, seeded and sliced

1 Cup Grape Tomatoes

1 Cup Fresh Spinach

1 1/2 Lb Ground Chicken

3 Tbsp Onion, diced

3 tsp Worcestershire Sauce

1 1/2 Tbsp Extra Virgin Olive Oil

Salt and Ground Black Pepper to Taste

3 Avocados, peeled, seeded and sliced

1 1/2 Cups Grape Tomatoes

1 1/2 Cups Fresh Spinach

Directions

1. In a bowl, mix together chicken, onion, Worcestershire and salt and pepper. Form mixture into equally sized patties.

2. In a skillet, heat olive oil on medium heat and add patties to skillet and cook for approx. 5 minutes on each side or until cooked through.

3. Serve on a whole wheat bun topped with avocado, tomatoes, and spinach.

6 Medium Sized Sweet Potatoes, peeled and sliced

6 tsp Extra Virgin Olive Oil

Salt and Ground Black Pepper to Taste



Directions

1. Preheat oven to 400 degrees.

2. Line a sheet pan with parchment paper.

3. Peel and slice potatoes into strips and place them on sheet pan.

4. Roast in oven for 25 minutes.
