Lunch:
Apple Grilled Cheese

1 Apple, core removed and sliced into thin slices

2 oz Fresh Mozzarella, sliced

4 Slices Whole Grain Bread

2 Tbsp Extra Virgin Olive Oil

2 Apples, core removed and sliced into thin slices

4 oz Fresh Mozzarella, sliced

8 Slices Whole Grain Bread

4 Tbsp Extra Virgin Olive Oil

3 Apples, core removed and sliced into thin slices

6 oz Fresh Mozzarella, sliced

12 Slices Whole Grain Bread

6 Tbsp Extra Virgin Olive Oil

Directions

1. Layer apples and cheese evenly on slices of bread and make a sandwich

2. In a large skillet, heat olive oil on medium-medium high heat and add sandwiches to skillet, reducing heat if necessary

3. Cook until toasted on each side and cheese has begun to melt, about 2-3 minutes per side

Dinner:
Sausage, Kale, and Sweet Potato Soup

1/3 Tbsp Extra Virgin Olive Oil

1 Clove Garlic, minced

1/2 Cup Sweet Onion, chopped

1 Cup Sweet Potatoes, peeled and diced

4 1/3 oz Fully Cooked Turkey Kielbasa Sausage, cut into 1/2 inch slices

2 Cups Chicken Broth

1 1/3 Cups Kale, chopped

1/3 (14.5 oz) Can Cannellini Beans, undrained

1/3 tsp Paprika

1/3 tsp Cumin

Salt and Ground Black Pepper to Taste

Directions

1. Heat olive oil in a large pot over medium- medium high heat

2. Add onion and sauté for approx. 3 minutes and then add sweet potatoes, sausage, and garlic and sauté for another 3-5 minutes

3. Pour in broth and gently stir in spices

4. Bring to a boil, reduce heat, and simmer for approx. 10 minutes

5. Add kale and cannellini beans and simmer for an additional 5-10 minutes
