Lunch: Chicken Caesar Salad

4 Cups Romaine Lettuce, chopped

2 Tbsp Parmesan Cheese, grated

4 Tbsp Store Bought Organic Caesar Dressing

Directions

1. Evenly divide and layer all ingredients, beginning with romaine lettuce and ending with dressing.




Dinner: Lemon Garlic Tilapia w/Mashed Potatoes and Green Beans

1 Clove Garlic, minced

Directions

1. Preheat oven to 425 degrees.

2. Lightly spray baking dish with cooking spray.

3. In a bowl, whisk together lemon juice, olive oil, garlic, and salt and pepper.

4. Place tilapia in baking dish and pour lemon juice mixture over tilapia and top each fillet w/a lemon slice.

5. Bake in oven 15-20 minutes or until tilapia easily flakes.



Mashed Potatoes

2 Medium Sized Russet Potatoes, peeled and diced

¼ Cup Unsweetened Plain Almond Milk

¼ Cup Garlic Powder

Salt and Ground Black Pepper to Taste

Directions

1. Put potatoes into a pot and cover w/water. Bring to a boil and continue boiling for approx. 15 minutes or until potatoes are tender.

2. Drain water from potatoes, add in other ingredients, and blend until creamy.

 

Sautéed Green Beans

Directions

1. In a skillet, heat olive oil on medium to medium high heat.

2. Add green beans to skillet. Salt and pepper to taste, and sauté approx. 10 minutes or to desired tenderness.
