2 Tortillas

4 Slices Turkey

1 Cup Spinach

2 Tbsp Mayo

½ Cup Mini Carrots

½ Cup Grapes

4 Tortillas

8 Slices Turkey

2 Cups Spinach

4 Tbsp Mayo

1 Cup Mini Carrots

1 Cup Grapes

6 Tortillas

12 Slices Turkey

3 Cups Spinach

6 Tbsp Mayo

1 1/2 Cup Mini Carrots

1 1/2 Cup Grapes

Directions

1. Spread 1 Tbsp mayo on one side of tortillas

2. Layer spinach and turkey evenly on the tortillas

3. Roll tortillas tightly

4. Slice into ½ inch pinwheels

5. Serve with grapes and mini carrots on the side


Dinner: Fettuccine w/Rotisserie Chicken and Beans

4 oz Fettuccine Pasta (High quality gluten free is delicious)

1/8 Cup Extra Virgin Olive Oil

1/2 Clove Garlic, minced

1/2 Cup Rotisserie Chicken, chopped

1/2 (14.5 oz) Can Great Northern Beans

1/2 Cup Spinach, chopped

1 Tbsp Nutritional Yeast

1/3 Cup Chicken Broth

Salt and Pepper to Taste

8 oz Fettuccine Pasta (High quality gluten free is delicious)

¼ Cup Extra Virgin Olive Oil

1 Clove Garlic, minced

1 Cup Rotisserie Chicken, chopped

1 (14.5 oz) Can Great Northern Beans

1 Cup Spinach, chopped

2 Tbsp Nutritional Yeast

¾ Cup Chicken Broth

Salt and Pepper to Taste

12 oz Fettuccine Pasta (High quality gluten free is delicious)

1/3 Cup Extra Virgin Olive Oil

Directions

1. Cook fettuccine according to package directions

2. While noodles are cooking, heat olive oil in a skillet on medium high heat

3. Add garlic to olive oil and saute for approx 2 minutes, stirring frequently

4. Reduce heat to medium and add chicken and beans to olive oil. Stir gently until well blended. Bring to a simmer and stir in spinach, nutritional yeast, and chicken broth. Allow to simmer for approx 2 more minutes

5. Drain noodles and stir them into chicken mixture
