Lunch: Greek Grilled Sandwich

4 Slices Whole Wheat Bread

4 Tbsp Store Bought Hummus

1 Cup Red Bell Pepper, sliced into strips

2 Cups Fresh Spinach, chopped

½ Cup Feta Cheese, crumbled

2 Tbsp Extra Virgin Olive Oil

8 Slices Whole Wheat Bread

8 Tbsp Store Bought Hummus

2 Cup Red Bell Pepper, sliced into strips

4 Cups Fresh Spinach, chopped

1 Cup Feta Cheese, crumbled

4 Tbsp Extra Virgin Olive Oil

12 Slices Whole Wheat Bread

12 Tbsp Store Bought Hummus

3 Cup Red Bell Pepper, sliced into strips

6 Cups Fresh Spinach, chopped

1 1/2 Cup Feta Cheese, crumbled

6 Tbsp Extra Virgin Olive Oil

Directions

1. Evenly spread hummus on bread slices.

2. Layer remaining ingredients on hummus and create sandwiches.

3. In a skillet, heat olive oil on medium to medium high heat and add sandwiches to skillet.

4. Cook sandwiches 3-4 minutes per side or until desired doneness.




Dinner: Lima Bean and Beef Stew

½ Lb Beef Stew Meat

2 Tbsp Extra Virgin Olive Oil

1 Tbsp Worcestershire

2 Cloves Garlic, minced

2 Tbsp Tomato Sauce

½ Lb Lima Beans

1 (15 oz) Can diced Tomatoes, undrained

¼ Cup Onion, diced

2 Cups Water

½ tsp Cinnamon

1 Bay Leaf

Salt and Ground Black Pepper to Taste

1 Lb Beef Stew Meat

4 Tbsp Extra Virgin Olive Oil

2 Tbsp Worcestershire

4 Cloves Garlic, minced

4 Tbsp Tomato Sauce

1 Lb Lima Beans

2 (15 oz) Can diced Tomatoes, undrained

1/2 Cup Onion, diced

4 Cups Water

1 tsp Cinnamon

2 Bay Leaves

Salt and Ground Black Pepper to Taste

Directions

1. In a skillet, heat olive oil on medium to medium high heat. Add stew meat, garlic, and Worcestershire to a large pot. Cook meat on medium for approx. 10 minutes or to desired doneness, turning frequently.

2. Once meat has cooked add all other ingredients to pot and bring to a boil. Reduce heat and simmer for at least 30 minutes.
