Lunch: Buffalo Chickpea Salad

2/3 (14.5 oz) Can Chickpeas, rinsed, drained and patted dry

1/8 Cup Mayonnaise

1/8 Cup Bell Pepper, finely diced

1/3 Cup Carrots, finely diced

1/3 Cup Celery, finely diced

1/8 Cup Green Onions, diced

1/8 Cup Hot Sauce

1/8 tsp Onion Powder

1/8 tsp Garlic Powder

Salt and Ground Black Pepper to Taste

1 1/2- 2 (14.5 oz) Cans Chickpeas, rinsed, drained and patted dry

Directions

1. Once rinsed, drained and patted dry, put chickpeas into a blender or food processor and process just until mashed

2. Mix in all other ingredients

3. Serve as a sandwich on whole grain bread or on a bed of spinach or lettuce

Dinner: Pear, Bacon, and Blue Cheese Pizza Drizzled w/Honey

2 Naan Crusts

2 tsp Extra Virgin Olive Oil

4 Slices Bacon, cooked and crumbled

1 Pear, thinly sliced

1/2 Cup Blue Cheese, crumbled    

4 Tbsp Honey

4 Naan Crusts

4 tsp Extra Virgin Olive Oil

8 Slices Bacon, cooked and crumbled

2 Pears, thinly sliced

1 Cup Blue Cheese, crumbled

8 Tbsp Honey

6 Naan Crusts

6 tsp Extra Virgin Olive Oil

12 Slices Bacon, cooked and crumbled

3 Pears, thinly sliced

1 1/2 Cups Blue Cheese, crumbled

12 Tbsp Honey

 

Directions

1. Preheat oven to 425 degrees

2. In a skillet cook bacon on medium-medium high heat until crisp, flipping occasionally. Remove from heat, drain on a paper towel, and crumble

3. Brush crust with olive oil

4. Layer remaining ingredients, beginning and ending with blue cheese

5. Drizzle with ½ of the honey before baking

6. Bake 10-15 minutes

7. Drizzle with remaining honey
