Lunch: Greek Salmon Salad

½ Lb Salmon Fillets

½ tsp Extra Virgin Olive Oil

1 tsp Greek Seasoning

4 Cups Fresh Spinach

½ Cup Grape Tomatoes, halved

½ Cup Feta Cheese, crumbled

½ Cup Kalamata Olives, halved

½ Cup Purple Onion, sliced

Cooking Spray

1 Lb Salmon Fillets

1 tsp Extra Virgin Olive Oil

2 tsp Greek Seasoning

8 Cups Fresh Spinach

1 Cup Grape Tomatoes, halved

1 Cup Feta Cheese, crumbled

1 Cup Kalamata Olives, halved

1 Cup Purple Onion, sliced

Cooking Spray

1 1/2 Lb Salmon Fillets

1 1/2 tsp Extra Virgin Olive Oil

3 tsp Greek Seasoning

12 Cups Fresh Spinach

1 1/2 Cups Grape Tomatoes, halved

1 1/2 Cups Feta Cheese, crumbled

1 1/2 Cups Kalamata Olives, halved

1 1/2 Cups Purple Onion, sliced

Cooking Spray



Directions

1. Preheat oven to 400 degrees.

2. Lightly spray baking dish w/cooking spray.

3. Place salmon in baking dish and evenly sprinkle w/Greek seasoning and bake for 12-15 minutes or until salmon easily flakes, but isn’t dry.

4. While salmon is baking, evenly layer remaining ingredients on a plate.

5. Once salmon is ready, place it on top of salad and drizzle salad with dressing.

Directions

1. Whisk all ingredients together and drizzle over salad.




Dinner: Chicken Avocado Burgers w/Sweet Potato Fries

1 Tbsp Onion, diced

1 tsp Worcestershire Sauce

½ Tbsp Extra Virgin Olive Oil

1 Avocado, peeled, seeded and sliced

½ Cup Grape Tomatoes

½ Cup Fresh Spinach

1 Lb Ground Chicken

2 Tbsp Onion, diced

2 tsp Worcestershire Sauce

1 Tbsp Extra Virgin Olive Oil

Directions

1. In a bowl, mix together chicken, onion, Worcestershire and salt and pepper. Form mixture into equally sized patties.

2. In a skillet, heat olive oil on medium heat and add patties to skillet and cook for approx. 5 minutes on each side or until cooked through.

3. Serve on a whole wheat bun topped with avocado, tomatoes, and spinach.

Sweet Potato Fries

Directions

1. Preheat oven to 400 degrees.

2. Line a sheet pan with parchment paper.

3. Peel and slice potatoes into strips and place them on sheet pan.

4. Roast in oven for 25 minutes.
