Lunch: Chicken Cobb Salad

2 Eggs, hard boiled

2 Slices Bacon, cooked

2 Chicken Breasts, roasted and diced

4 Cups Romaine Lettuce, chopped

1 Beefsteak Tomato, diced

½ Avocado, seeded, peeled, and diced

½ Cup Blue Cheese, crumbled

Cooking Spray



4 Eggs, hard boiled

4 Slices Bacon, cooked

8 Cups Romaine Lettuce, chopped

2 Beefsteak Tomato, diced

1 Avocado, seeded, peeled, and diced

1 Cup Blue Cheese, crumbled

6 Eggs, hard boiled

6 Chicken Breasts, roasted and diced

12 Cups Romaine Lettuce, chopped

3 Beefsteak Tomato, diced

1 1/2 Avocado, seeded, peeled, and diced

1 1/2 Cup Blue Cheese, crumbled

Directions

1. Preheat oven to 350 degrees.

2. Lightly spray a small baking dish and place chicken breasts into baking dish, salt and pepper to taste, and roast in oven for approx 30 minutes or until cooked through.

3. Bring a small saucepan of water to a boil on high heat and add eggs. Reduce heat and simmer for 10-15 minutes. Remove from heat and allow to cool. Peel off shell and quarter each one.

4. Cook bacon to desired crispness and drain off fat.

5. Layer all ingredients on a plate and drizzle with dressing.

Balsamic Vinaigrette

1/8 Cup Balsamic Vinegar

1/2 tsp Honey

1/3 tsp Dijon Mustard

1/3 Clove Garlic, minced

Salt and Pepper to Taste

2/3 tsp Dijon Mustard

Directions

1. Whisk all ingredients together very well and drizzle over salad.




Dinner: BBQ Chicken Pizza

4 Chicken Tenderloins, cut into chunks and sautéed

4 Tbsp Red Onion, diced

1/2 Cup Mozzarella Cheese, shredded

4 Tbsp Store Bought BBQ Sauce Plus Some for Drizzling

4 Naan Pizza Crusts

8 Chicken Tenderloins, cut into chunks and sautéed

2 Tbsp Extra Virgin Olive Oil

8 Tbsp Red Onion, diced

1 Cup Mozzarella Cheese, shredded

8 Tbsp Store Bought BBQ Sauce Plus Some for Drizzling

6 Naan Pizza Crusts

12 Chicken Tenderloins, cut into chunks and sautéed

3 Tbsp Extra Virgin Olive Oil

12 Tbsp Red Onion, diced

1 1/2 Cup Mozzarella Cheese, shredded

12 Tbsp Store Bought BBQ Sauce Plus Some for Drizzling

Directions

1. Preheat oven to 425 degrees.

2. In a skillet, heat olive oil on medium to medium high heat.

3. Add chicken to skillet and sauté for approx. 6-8 minutes or until cooked through, reducing heat if necessary.

4. Evenly spread BBQ sauce on each crust and evenly layer chicken, red onion, and cheese on top of sauce. Drizzle a little more BBQ sauce on top.

5. Bake for 12-15 minutes in oven or until cheese is melted and crust is golden.
