Lunch: Chicken Cobb Salad

2 Eggs, hard boiled

2 Slices Bacon, cooked

2 Chicken Breasts, roasted and diced

4 Cups Romaine Lettuce, chopped

1 Beefsteak Tomato, diced

½ Avocado, seeded, peeled, and diced

½ Cup Blue Cheese, crumbled

Cooking Spray

4 Eggs, hard boiled

1 Avocado, seeded, peeled, and diced

6 Eggs, hard boiled

6 Slices Bacon, cooked

6 Chicken Breasts, roasted and diced

12 Cups Romaine Lettuce, chopped

3 Beefsteak Tomato, diced

1 1/2 Avocado, seeded, peeled, and diced

1 1/2 Cups Blue Cheese, crumbled

Directions

1. Preheat oven to 350 degrees.

2. Lightly spray a small baking dish and place chicken breasts into baking dish, salt and pepper to taste, and roast in oven for approx 30 minutes or until cooked through.

3. Bring a small saucepan of water to a boil on high heat and add eggs. Reduce heat and simmer for 10-15 minutes. Remove from heat and allow to cool. Peel off shell and quarter each one.

4. Cook bacon to desired crispness and drain off fat.

5. Layer all ingredients on a plate and drizzle with dressing.

Balsamic Vinaigrette

1/2 tsp Honey

1/3 tsp Dijon Mustard

1/3 Clove Garlic, minced

Salt and Pepper to Taste

Directions

1. Whisk all ingredients together very well and drizzle over salad.


Dinner: Stovetop Ground Turkey Burgers

1/2 Lb Ground Turkey

Directions

1. Shape meat into 4 equally sized patties. Press a dimple in the middle on one side of each patty.

2. Sprinkle each side of patties with salt and pepper to taste.

3. Cook on medium-medium/high heat on stovetop for 10-15 minutes or until cooked through, flipping once half-way through **You might have to add a little water to the skillet to keep burgers from sticking and burning**

4. Serve on warmed whole wheat buns (or no buns at all) with your favorite toppings.



Sweet Potato Fries

1/2 Tbsp Extra Virgin Olive Oil

1/4 tsp Salt

1/2 Clove Garlic, minced

3 Medium-Large Sweet Potatoes

1 1/2 Tbsp Extra Virgin Olive Oil

3/4 tsp Salt

1 1/2 Cloves Garlic, minced



Directions

1. Preheat oven to 400 degrees.

2. Cut sweet potato into wedges.

3. Place sweet potatoes on a large baking sheet and coat them with the olive oil, salt, and garlic.

4. Bake for approx. 20 minutes, flipping half-way through.

5. Potatoes should be tender and starting to brown.
