Lunch: Classic Egg Salad Sandwich

2 Eggs, hard boiled

2 Tbsp Olive Oil Mayonnaise

1 Tbsp Sweet Pickle Relish

Salt and Ground Black Pepper to Taste

4 Slices Whole Wheat Bread (Gluten free is delicious)

Directions

1. Place eggs in a pot and cover with water.

2. Bring to a boil and continue boiling on medium heat for 15 minutes.

3. Remove eggs from water and peel shells from eggs. Allow to cool.

4. Once cooled, put eggs into a bowl and mash with a fork.

5. Stir in all other ingredients and mix well.

6. Evenly divide egg salad between slices of bread and create sandwiches.


Dinner: Pepper Steak w/Jasmine Rice

2/3 lb Top Round Steak, thinly sliced

1 1/2 Tbsp Worcestershire Sauce

1 1/2 Tbsp Soy Sauce

1 Tbsp Garlic Powder

1/2 Tbsp Sugar

1/2 Tbsp Dried Basil

1 1/2 Bell Peppers (Red, Yellow, Green), seeded and sliced

1 Yellow Onion, sliced

1/2 Tbsp Extra Virgin Olive Oil

1 ¼ lb Top Round Steak, thinly sliced

3 Tbsp Worcestershire Sauce

3 Tbsp Soy Sauce

2 Tbsp Garlic Powder

1 Tbsp Sugar

1 Tbsp Dried Basil

3 Bell Peppers (Red, Yellow, Green), seeded and sliced

2 Yellow Onions, sliced

1 Tbsp Extra Virgin Olive Oil



2 lb Top Round Steak, thinly sliced

4 1/2 Tbsp Worcestershire Sauce

4 1/2 Tbsp Soy Sauce

3 Tbsp Garlic Powder

1 1/2 Tbsp Sugar

1 1/2 Tbsp Dried Basil

4 1/2 Bell Peppers (Red, Yellow, Green), seeded and sliced

3 Yellow Onions, sliced

1 1/2 Tbsp Extra Virgin Olive Oil

Directions

1. Slice meat into thin slices and place into a ziplock bag or container for marinating.

2. Whisk together Worcestershire, soy sauce, garlic powder, sugar, and dried basil. Pour over meat.

3. Marinate for at least 30 minutes, reserving marinade.

4. In a skillet, heat olive oil on medium to medium high heat and add onions. Sauté until tender and translucent, approx. 5 minutes.

5. Remove veggies from skillet and set aside.

6. Add steak to skillet, reducing heat if necessary, and stir fry until cooked through, approx. 8-10 minutes.

7. Add onions and peppers back to skillet and stir into the meat.

8. Pour reserved marinade over meat and veggies and simmer on low to medium heat approx. 10-15 minutes.

9. Serve over Jasmine rice, recipe below.

1/2 Cup Jasmine Rice

1/2 Tbsp Extra Virgin Olive Oil

3/4 Cups Water

1/4 tsp Salt



1 Cup Jasmine Rice

1 Tbsp Extra Virgin Olive Oil

1 1/2 Cups Water

1/2 tsp Salt



1 1/2 Cups Jasmine Rice

1 1/2 Tbsp Extra Virgin Olive Oil

2 1/4 Cups Water

3/4 tsp Salt

Directions

1. Add water, rice and salt to a medium sauce pan and bring to a boil.

2. Reduce heat to low to medium and cover.

3. Cook covered until liquid is absorbed and rice is tender, approx. 15-20 minutes.

4. Add oil, stir gently, and serve.
