Lunch: Creamy Tomato Soup

1/8 Cup Extra Virgin Olive Oil

1/2 Clove Garlic, minced

1 Tbsp Cornstarch

1/4 tsp Dried Basil

1/2 tsp Salt

1 1/4 Cups Unsweetened Plain Almond Milk

1/2 tsp Basil Pesto

1/2 (15 oz) Can Diced Tomatoes w/Basil and Oregano

½ (8 oz) Can Tomato Sauce

1/4 Cup Parmesan Cheese, grated 

¼ Cup Extra Virgin Olive Oil

1 Clove Garlic, minced

2 Tbsp Cornstarch

½ tsp Dried Basil

1 tsp Salt

2 ½ Cups Unsweetened Plain Almond Milk

1 tsp Basil Pesto

1 ½ (8 oz) Cans Tomato Sauce

3/4 Cup Parmesan Cheese, grated

 

Directions

1. In a large pot, heat olive oil on medium to medium high heat. Add garlic and sauté for 1 minute.

2. Add cornstarch, basil, salt and pesto and whisk together very well.

3. Reduce heat to medium and whisk in milk. Continue whisking until thickened.

4. Add in remainder of ingredients, whisking to blend well.

5. Heat thoroughly and serve.




Dinner: Stovetop Italian Burgers w/Oven Roasted Potatoes

½ Lb Grass Fed Organic Ground Beef

½ tsp Italian Seasoning

2 oz Fresh Mozzarella, sliced

4 Tbsp Marinara (Store bought can be used, but homemade recipe below)

2 Whole Wheat Hamburger Buns



1 Lb Grass Fed Organic Ground Beef

1 tsp Italian Seasoning

4 oz Fresh Mozzarella, sliced

8 Tbsp Marinara (Store bought can be used, but homemade recipe below)

1 1/2 Lb Grass Fed Organic Ground Beef

1 1/2 tsp Italian Seasoning

6 oz Fresh Mozzarella, sliced

12 Tbsp Marinara (Store bought can be used, but homemade recipe below)

6 Whole Wheat Hamburger Buns

 

Directions

1. In a bowl, mix beef and Italian seasoning together very well.

2. Shape meat mixture into even ¼ lb patties.

3. Place in a skillet on medium to medium high heat and cook for approx. 10-12 minutes, or until no longer pink on inside, flipping halfway through.

4. While meat is cooking, preheat oven to 400 degrees.

5. Remove meat from heat and drain off any excess fat.

6. Top each patty with 2 Tbsp marinara and 1 oz slice of mozzarella and place patties into a baking pan.

7. Heat in oven until cheese has melted, approx. 5 minutes.

8. Remove burgers from oven and place into buns.

Homemade Marinara

1 (14.5 oz) Can Crushed Tomatoes

1 (3 oz) Can Tomato Paste

1 tsp Dried Basil

1 tsp Dried Oregano

1/2 tsp Salt

1/2 tsp Sugar

1/4 Cup Water

 

1/3 Cup Extra Virgin Olive Oil

1/3 Cup Red Onion, diced

3 Cloves Garlic, minced

1 1/2 (14.5 oz) Cans Crushed Tomatoes

1 1/2 (3 oz) Cans Tomato Paste

1 1/2 tsp Dried Basil

1 1/2 tsp Dried Oregano

3/4 tsp Salt

3/4 tsp Sugar

1/3 Cup Water

 

 

Directions

1. In a saucepan, heat olive oil on medium heat, add onion, and sauté for approx. 1 minute.

2. Add garlic and stir constantly for approx. 30 seconds.

3. Stir in remaining ingredients until mixed well.

4. Reduce heat to low, cover, and simmer for 20 minutes.

2. Cut potatoes in half and toss in olive oil.

3. Salt and pepper to taste.

4. Roast in oven 20 minutes or until fork tender and golden brown, flipping halfway through.
