Lunch: Chicken Cobb Salad

2 Eggs, hard boiled

2 Slices Bacon, cooked

2 Chicken Breasts, roasted and diced

4 Cups Romaine Lettuce, chopped

1 Beefsteak Tomato, diced

½ Avocado, seeded, peeled, and diced

½ Cup Blue Cheese, crumbled

Cooking Spray

4 Eggs, hard boiled

4 Slices Bacon, cooked

8 Cups Romaine Lettuce, chopped

2 Beefsteak Tomato, diced

1 Avocado, seeded, peeled, and diced

1 Cup Blue Cheese, crumbled

6 Eggs, hard boiled

6 Slices Bacon, cooked

6 Chicken Breasts, roasted and diced

12 Cups Romaine Lettuce, chopped

3 Beefsteak Tomato, diced

1 1/2 Avocado, seeded, peeled, and diced

1 1/2 Cups Blue Cheese, crumbled

Directions 

1. Preheat oven to 350 degrees

2. Lightly spray a small baking dish and place chicken breasts into baking dish, salt and pepper to taste, and roast in oven for approx 30 minutes or until cooked through

3. Bring a small saucepan of water to a boil on high heat and add eggs. Reduce heat and simmer for 10-15 minutes. Remove from heat and allow to cool. Peel off shell and quarter each one

4. Cook bacon to desired crispness and drain off fat

5. Layer all ingredients on a plate and drizzle with dressing

Balsamic Vinaigrette

Directions

Whisk all ingredients together very well and drizzle over salad

5 Slices Fresh Mozzarella

1/4 Cup Fresh Basil, whole

1 Large Tomatoes

1/2 Cup Marinara (Store bought can be used. Homemade recipe below)

Directions

Preheat oven to 425 degrees

Spread ¼ cup marinara on each crust

Place 5 slices mozzarella on each crust

On top of mozzarella, layer tomatoes

Top with fresh basil

Bake for approx. 15 minutes
