Quinoa Avocado Salad

2 Cups Quinoa, cooked

1 Avocado, peeled, seeded, chopped

1 Cup Fresh Spinach, chopped

2 Green Onions, diced

1 Cup Grape Tomatoes, halved

½ Bell Pepper, diced

1 tsp Dried Basil

2 Tbsp Extra Virgin Olive Oil

2 tsp Balsamic Vinegar

2 Tbsp Lemon Juice

Salt and Ground Black Pepper to Taste

Directions

1. Whisk together basil, olive oil, balsamic vinegar, lemon juice, salt and pepper. Set aside.

2. Gently mix together all other ingredients and pour olive oil mixture over it and toss to coat.

 


Dinner:
Flatbread Pizza w/Brussel Sprouts, Goat Cheese, and Bacon

2 Naan Pizza Crusts

2 oz Goat Cheese

2 Slices Bacon, cooked and crumbled

4 Brussel Sprouts, finely diced

½ Cup Onion, finely diced

¼ Cup Honey

1 Cup Onion, finely diced

1/2 Cup Honey

6 Naan Pizza Crusts

6 oz Goat Cheese

6 Slices Bacon, cooked and crumbled

12 Brussel Sprouts, finely diced

1 1/2 Cups Onion, finely diced

3/4 Cup Honey

Preheat oven to 425 degrees.

Spread goat cheese evenly between each pizza crust.

Cook bacon on medium to medium high heat in a skillet until crisp or in a microwave for approx. 2 minutes or until crisp and then crumble.

Evenly layer onion, Brussel sprouts, onion, and bacon on each crust and drizzle w/honey.

Bake in oven 10-12 minutes.
