Lunch: Chickpea Pesto Lettuce Wraps

1 (15 oz) Can Chickpeas, rinsed and drained

2 Tbsp Store Bought Basil Pesto

4 Tbsp Feta Cheese, crumbled

4 Romaine Lettuce Leaves

2 (15 oz) Cans Chickpeas, rinsed and drained

4 Tbsp Store Bought Basil Pesto

8 Tbsp Feta Cheese, crumbled

8 Romaine Lettuce Leaves

3 (15 oz) Cans Chickpeas, rinsed and drained

6 Tbsp Store Bought Basil Pesto

12 Tbsp Feta Cheese

12 Romaine Lettuce Leaves

Directions

1. In a bowl, gently mix pesto into chickpeas

2. Evenly spoon chickpeas into lettuce leaves and evenly top w/feta cheese.

3. Serve w/fresh fruit.


Dinner:Greek Shrimp Pizza

2 Naan Flat Bread Crusts

4 Tbsp Store Bought Marinara Sauce

3 tsp Greek Seasoning

6 Tbsp Feta Cheese, crumbled

6 Slices Fresh Mozzarella

12 Large Shrimp, peeled, tails removed, and thawed if frozen

2 Tbsp Extra Virgin Olive Oil

 

4 Naan Flat Bread Crusts

8 Tbsp Store Bought Marinara Sauce

6 tsp Greek Seasoning

12 Tbsp Feta Cheese, crumbled

12 Slices Fresh Mozzarella

24 Large Shrimp, peeled, tails removed, and thawed if frozen

4 Tbsp Extra Virgin Olive Oil

6 Naan Flat Bread Crusts

12 Tbsp Store Bought Marinara Sauce

9 tsp Greek Seasoning

18 Tbsp Feta Cheese, crumbled

18 Slices Fresh Mozzarella

36 Large Shrimp, peeled, tails removed, and thawed if frozen

6 Tbsp Extra Virgin Olive Oil

Directions

1. Preheat oven to 425 degrees.

2. Evenly spread marinara on flat bread.

3. Sprinkle on 1/2 tsp Greek seasoning and then 2 Tbsp Feta on each crust.

4. Evenly add slices of fresh mozzarella and 1/2 tsp Greek Seasoning.

5. In a skillet, add olive oil and heat on medium to medium high.

6. Add shrimp and sauté for approx. 2 minutes per side or until shrimp are pink, being careful not to overcook.

7. Add shrimp to pizza.

8. Sprinkle on remaining 1/2 tsp Greek seasoning.

9. Top with remaining feta.

10. Bake for 12-15 minutes
