Lunch: Loaded Italian Salad

4 Cups Romaine Lettuce

1/2 Cup Grape Tomatoes, halved

1/4 Cup Red Onion, diced

1/2 Cup Black Olives, sliced

1/4 Cup Pepperoncini Peppers, sliced

1/2 Cup Cucumber, diced

2 oz Salami, sliced

2 oz Fresh Mozzarella Cheese

8 Cups Romaine Lettuce

1 Cup Grape Tomatoes, halved

1/2 Cup Red Onion, diced

1 Cup Black Olives, sliced

1/2 Cup Pepperoncini Peppers, sliced

4 oz Salami, sliced

4 oz Fresh Mozzarella Cheese

12 Cups Romaine Lettuce

1 1/2 Cups Grape Tomatoes, halved

3/4 Cup Red Onion, diced

Directions

1. Layer in order of preference and drizzle w/dressing (Recipe below)

2 Tbsp Red Wine Vinegar

1/2 tsp Italian Seasoning

2 tsp Parmesan Cheese

1/4 tsp Salt



8 Tbsp Extra Virgin Olive Oil

4 Tbsp Red Wine Vinegar

1 tsp Italian Seasoning

4 tsp Parmesan Cheese

1/2 tsp Salt



12 Tbsp Extra Virgin Olive Oil

6 Tbsp Red Wine Vinegar

1 1/2 tsp Italian Seasoning

6 tsp Parmesan Cheese

3/4 tsp Salt



Directions

1. Whisk all ingredients together and drizzle over salad.


Dinner: Fettuccine w/Rotisserie Chicken and Beans

4 oz Fettuccine Pasta (High quality gluten free is delicious)

1/8 Cup Extra Virgin Olive Oil

1/2 Clove Garlic, minced

1/2 Cup Rotisserie Chicken, chopped

1/2 (14.5 oz) Can Great Northern Beans

1/2 Cup Spinach, chopped

1 Tbsp Nutritional Yeast

1/3 Cup Chicken Broth

Salt and Pepper to Taste

8 oz Fettuccine Pasta (High quality gluten free is delicious)

¼ Cup Extra Virgin Olive Oil

1 Clove Garlic, minced

1 Cup Rotisserie Chicken, chopped

1 (14.5 oz) Can Great Northern Beans

1 Cup Spinach, chopped

2 Tbsp Nutritional Yeast

¾ Cup Chicken Broth

Salt and Pepper to Taste

12 oz Fettuccine Pasta (High quality gluten free is delicious)

1/3 Cup Extra Virgin Olive Oil

1 1/2 Clove Garlic, minced

1 1/2 Cup Rotisserie Chicken, chopped

Directions

1. Cook fettuccine according to package directions.  

2. While noodles are cooking, heat olive oil in a skillet on medium high heat.  

3. Add garlic to olive oil and saute for approx 2 minutes, stirring frequently.  

4. Reduce heat to medium and add chicken and beans to olive oil. Stir gently. until well blended. Bring to a simmer and stir in spinach, nutritional yeast, and chicken broth.

5. Allow to simmer for approx 2 more minutes.  

6. Drain noodles and stir them into chicken mixture.
